Strawberry Soup with Mint


1 bag of frozen strawberries thawed
1 cup of Greek vanilla yogurt
1 cup of sour cream
1 cup of apple juice
10 mint leaves chopped


1. Thaw strawberries in refrigerator overnight.
2. In a blender or food processor puree strawberries
3. In a medium size bowl: add strawberries, yogurt, sour cream and apple juice. Mix on medium speed with a blender for 2 minutes.
4. Pour into bowls and garnish with mint.
