Italian Style Baked Red Potato Wedges Side Dish


4 Idaho Potatoes washed and peeled
1 14.5 oz. of Diced Tomatoes with Basil, Garlic and Oregano
½ cup of Italian Dressing
1 cup of Shredded Mozzarella
1 cup of Cooked Chopped Bacon


1. Preheat Oven to 375 degrees.
2. Cut peeled potatoes into wedges.
3. In a bowl mix potato wedges with Italian dressing.
4. In a 9×13 pan add diced tomatoes.
5. On top of tomatoes evenly spread red potato wedges.
6. On top of potato wedges add bacon.
7. Top bacon with cheese.
8. Bake for 45 minutes at 375 degrees or until potatoes are tender with a fork.

Serve as a side dish.
